crockpot chicken in creamy tomato-mushroom sauce

This is a variation on the theme: chicken thighs in cream of whatever with vegetables.

2 cans of cream of mushroom soup
1 small can crushed tomatoes (or diced, depending on what you like)
1/2 cup frozen spinach, thawed
3 potatoes, chopped
1 onion
2 cloves garlic
1 bay leaf
8-ish skinless (and boneless? up to you) chicken thighs

Throw everything in the crockpot. Cook on low for 8 hours or high for 4-5.

Variations: Add corn, peas, carrots, kale, zucchini, fresh basil from your garden, whatever!
